Black-Eyed Peas and Greens

Ingredients
1 Cup Black-eyed peas (cowpeas), immature seeds, cooked, boiled, drained, without salt 5 cup, chopped Swiss Chard 1 cup (8 fl oz) Chicken Broth 1 large Onions, raw 4 fl oz White Wine 2 tbsp Olive Oil 2 oz Ekrich Turkey Smoked Sausage, cut into 1/4" dice
Directions
Chop chard into bite sized pieces. Slice onion into half moons, about 1/4" thick.
Heat oil in large cast-iron pan. Add onion and salt to taste and saute until onions begin to brown. Add chard, smoke turkey and broth. Reduce heat to medium-low, cover and cook greens until very soft, about 12 - 15 minutes, tossing occasionally.
Add cooked peas and adjust seasoning. Remove cover, increase heat to high and cook until most of the liquid has evaporated. Add hot sauce to taste, if desired and serve immediately.
