Pork Tenderloin Diane

1 lb Pork Tenderloin, sliced into 8 pieces2 t lemon pepper seasoning2 T Light Margarine6 t lemon juice1 T Worcestershire Sauce1 t Dijon Mustard1 T Parsley
Makes 4 servings (1/4 lb apiece)
Slice tenderloin into 8 pieces. Sprinkle both sides of each medallion with lemon pepper. In a large skillet, cook pork in light margarine for 5-7 minutes per side or until cooked through. Remove the pork from the skillet.
In the same skillet, stir in lemon juice, Worcestershire, and dijon mustard. Cook until heated, scraping up the brown bits. Pour sauce over the meat. Sprinkle with parsley before serving.

YUM!! So easy in the pan, doubled the recipe as I had a 2 lb pork tenderloin. I did not change a thing about the recipe! Had to cook a little longer than 5 - 7 mins on each side because I did not take the pork out of the fridge earlier. Will make again! Thanks for sharing!! : ) - 11/3/08
