Sweet Potato Kale & Onion Fritatta

Ingredients
7 large Egg white, fresh 3 large Egg Yolk .666 cup, cubes Sweet potato .666 cup, chopped Onions, raw 2 cup, chopped Kale 3 tbsp Extra Virgin Olive Oil
Directions
whip egg whites
stir in yolks - refrigerate
cook sweet potato in one cup of water until water is evaporated
add in onion
add in olive oil
season with salt and pepper to taste
top with whipped egg mix
cook inn oven 8 mins at 425
