Rice Crust Pizza Quiche

2 cup White Rice, long grain, cooked 1 large Egg, fresh, whole, raw 1 tbsp Extra Virgin Olive Oil 6 large Egg, fresh, whole, raw 6 oz Mozzarella Cheese, part skim milk 2 serving Hormel Pepperoni Slices 14 slices 4 plum tomato Tomatoes, red, ripe, raw, year round average 2 small Onions, raw 2 clove Garlic
Preheat oven to 350 degrees F
Mix together 2 cups long grain rice and 1 egg.
Press into 10" or 11" spring form pan (it will leak so seal the bottom)
Drizzle olive oil on top - helps keep crust from drying out.
Cook in preheated oven for 5 minutes.
Remove from oven and cool (to avoid cooking eggs).
In the meantime mix together the rest of the ingredients, spice as desired with oregano, basil, parsley, whatever you like.
Pour over cooled crust.
Cook in oven for 40 - 45 minutes or until egg mixture has set.
