Apple Cinnamon Muffins

1 cup flour3/4 cup whole wheat flour1/4 cup sugar1/2 tsp. salt2 tsp. baking powder1 tsp. cinnamon2/3 cup soy milk1/3 cup vegetable oil1/3 cup unsweetened applesauce1 large granny smith apple, peeled and chopped
Heat oven to 400°. Spray 12 cup muffin pan with nonstick spray.
Combine flour, sugar, salt, baking powder and cinnamon. Combine soy milk, vegetable oil, and applesauce. Gently mix wet ingredients into dry ingredients. Fold in chopped apples.
Drop into prepared muffin pans. Bake 20 to 25 minutes until muffins are golden brown on top. Makes 12 muffins. (Serving size is 1 muffin.)
Optional: Dip tops into cinnamon sugar while still hot. (Not included in nutritional info.)
