Crockpot Jambalaya

1/2 pound turkey sausage, sliced1/2 pound frozen chicken breast1/2 pound frozen cooked shrimp1/2 bag Bird's Eye frozen Pepper Stir-Fry mix1 can diced tomatoes, with juice1 can low sodium chicken broth2 cups instant rice (white or brown)1 tbsp cajun or creole seasoning
1. Put the everything but the shrimp and rice into your slow cooker, and cook on LOW 7.5 hours (do NOT turn off the heat yet!).
2. After 7.5 hours, remove the chicken and cut into cubes. Add the frozen shrimp and instant rice and cook another 30 minutes or until the rice is done.
*Makes approx. 12 1-cup servings.

This was very good! We judge if it's a keeper if my 5 year grandson likes then we put it in the keep book. He asked for 2nds! I added med onion, 1/2 bell pepper, used frozen vegs I had on hand, added red pepper flakes and hot sauce since I didn't have the seasonings. Turned out great! - 6/22/11

we love jambalaya and the crockpot makes it easier. i add onion, oregano, parsley, wine and just a pinch of cayenne pepper...enough for flavor not for over powering spiciness. i ,also, make the steamed white rice on the side since only 1/4 cup has 95 cal. and i want to cut down on that. - 11/13/09
