Wow Wow, Whole Wheat Pancakes

1 C Whole Wheat Flour1 Tbs Brown Sugar-packed1/2 teaspoon Kosher Salt3/4 teaspoon Baking Powder1/2 teaspoon Baking Soda1 large egg1 C 2% Milk1 Tablespoon Lemon Juice-fresh1 1/2 Tablespoon unsalted Butter
Before anything...... Add Lemon juice to milk. Let sit before mixing in.( A great way to make low-fat buttermilk.)
Mix all dry ingredients together.
Add Milk mixture to dry and stir once. Mix in egg and melted butter.
Let stand over night in fridge- so it may double in batch size. If you don't have the time. Mix up the batch and let stand for about half an hour before cooking.
Makes 15- siliver doller size cakes.
