Loaded Cauliflower

Ingredients
6 cup (1" pieces) Cauliflower, cooked 8 serving Turkey Bacon, JennieO, 1 slice (by LYNNBABBITT) 6 tbsp chopped Fresh Chives 8 tbsp Hellman's Light Mayonaise 2 cup Kraft 2% Shredded Cheddar Cheese 1.5 cup, pieces or slices Mushrooms, fresh
Directions
Preheat oven to 425. In a large pot boil water and cook cauliflower for 8-10 minutes. Drain and let cool. Cook and crumble bacon. In a large bowl, combine cauliflower, sour cream, mayo, half of crumbled bacon, 3 tbsp. of chives, 1 cup of cheese and mushrooms and mix well. Place in a greased baking dish and cover with the remaining 1 cup of cheese and rest of bacon crumbles. Bake for 15-20 minutes until cheese is melted. Top with remaining 3 Tbsp chives and serve.
