2 onions sliced and separated 2 sliced portabella mushrooms1 can artichoke hearts1 small jar roasted red peppers1 pkg gorgonzola cheese crumbles1 box stove top stuffing (prepared)1 pkg parmesean cheese flakes1 can petite diced tomatoes with basil and oregano(drained)
Caramelize onions. Add mushrooms until they reduce by at least half.
Place onions and mushrooms in 9x13 baking dish.
Add artichoke hearts and red peppers. Sprinkle with gorgonzola cheese.
Add prepared stove top mixed with the parmesean.
Top with can tomatoes (drained)
Cover with foil. bake @ 350 for about 35-40 minutes. Until hot and bubbly. Serves 6.
