1 pie crust1 block soft tofu1/2 cup vanilla soy milk1 package vanilla Jell-O instant pudding1/4 cup strawberries1/4 cup raspberries1/4 cup blueberries
Bake pie crust.
In a blender, combine the cold soy milk, tofu, and pudding mix. Chill until the pie crust is cooked and cooled.
Pour the pudding mix into the cooled crust.
Arrange the fruit in a fun pattern on top.
Set in refrigerator to chill until ready to serve.
