Shrimp Vera Cruz (Modified)

Ingredients
1 tbsp olive oil1 large onion chopped2 cup red bell pepper strips2 cup green bell pepper strips8 Olives Spanish stuffed3 tsp chili sauce1 tbsp capers1/4 tsp cumin seed ground24 oz shrimp 16 oz tomato sauce4 clove garlic minced1,75 cup (can) diced tomatoes1.25 cup (can) diced tomatoes & green chiliesJuice of one lime (optional)
Directions
Heat oil in a large frying pan and add the onion and peppers (optional to add garlic). Cook until soft.
Add chili sauce, roughly chopped tomatoes, chopped olives, cumin, salt (to taste), capers and tomato sauce.
Once the sauce is simmering, add shrimp until they curl up and turn pink (DO NOT overcook them!)
Add the lime juice and serve over rice.
