16 oz Chicken breast, poached (by BONNIEJRF) 480 gram Trader Joes red enchilada sauce (by FLRTNFAIRY) 7.4 oz Philadelphia Cream Cheese 15 tortilla, medium (approx 6" di Corn Tortillas 2 oz Tillamook Pepper Jack Cheese
poach chicken breast-
on low melt cream cheese with 3 TB of your chicken stock-
shred chicken-
layer-in a casserole dish
5 tortillas-spread 1/3 cream cheese mixture-1/2 of your chicken-onion slices{optional}-drizzle 3/4 can of enchilada sauce-
cover with other layer the same way-
on top of second layer put 5 tortillas spread remaining cream cheese, drizzle remaining enchilada sauce, smooth together with back of spoon and top with shredded pepper jack cheese
bake at 350 degrees for 20 to 25 minutes until heated through and cheese is melted.
