Healthy Banana Oat Muffins

Ingredients
3 Cups Old Fashioned Oats4 tsp baking powder4 bananas1 tsp vanilla essence1 egg
Directions
Preheat oven to 425 F
Spray a12 count muffing pan with cooking spray
Place oats in food processor and pulse for about 30 seconds on high until it's coarsely ground
Cut the bananas into 1 inch pieces, mash with a fork or blend in a food processor until smooth and creamy
In a big mixing bowl put oats, baking powder, mashed banana, egg, vanilla essence and mix together with a wooden spoon, until smooth with no lumps.
Spoon the mixture into a muffin pane and bake at 425 F for 17 minutes
Makes 12 muffins
