4 oz Goat Cheese, Semisoft 2 cup Spinach, fresh 2 oz (47 kernels) Pistachio Nuts 2 serving Apple (1 cup chopped) 8 tbsp Trader Joe's Raspberry Vinaigrette 0.25 cup Red Onion - Chopped - (1 cup = 160g = 16 tbsp) 2 serving Pomegranate arils (seed/juice sacs) 1/2 cup 3 serving Trader Joe's Steamed & Peeled Baby Beets, 2 beets 113 gram(s) Quinoa - Trader Joe's Frozen Organic
Chop beets, apple, spinach, onion. Add pomegranate seeds, pistachios, and quinoa. Combine. Serve with champagne or raspberry vinaigrette.
You can add 2 C of Quinoa to this recipe if you like. I just added one to keep the carbs and calories down, but 2 C across 4 servings would be a very healthy meal for about 450 calories.
