Banana Bran Muffins

Ingredients
1 1/3 cups All Bran cereal1 cup mashed banana6 Tbsp. oil1/3 cup honey1/4 cup molasses1 egg, room temperature1 teaspoon fresh lemon juice1 cup plus 2 tbsp. flour1 1/4 tsp. baking powder1/2 tsp. cinnamon1 teaspoon baking soda1/2 tsp. salt, optional1/2 cup chopped dates, optional (not included in nutritional content)
Directions
Preheat oven to 400 degrees F. Spray muffin cups with nonstick cooking spray.

Mix first 7 ingredients in medium bowl.

Combine flour, baking powder, cinnamon, baking soda and salt in a large bowl. Stir in dates.

Make a well in center of dry ingredients. Add banana mixture to well and stir until just blended. Batter will be lumpy.

Fill muffin cups 3/4 full. Bake for 15-20 minutes. Cool 5 minutes; remove from pan. Makes 12 muffins.
