Simple Chicken, Brown Rice & Veggies Casserole

Ingredients
In a 9" baking dish add 1 c. brown rice and 1 c. water. Place chicken pieces on rice and season to taste. Spread mixed vegetable on chicken and top with low fat cream of mushroom soup. Spread the soup as a glaze over the vegetables
Directions
Place in preheated 350 degree oven for 45 minutes. Add 15 minutes if you start with frozen chicken breast.

Makes 4 1 1/2 cup servings for a one dish meal.
