Fake Chicken Fried Rice

1 1/2 c. shredded Cauliflower1 tbsp olive oil1 tsp onion powder1 tsp garlic powder1 egg, scrambled4 oz cooked chicken breast, cubed1 tbsp low sodium soy sauce
1. Heat oil in a wok or large skillet
2. Add onion & garlic powder to oil, saute briefly
3. Add shredded cauliflower and saute until slightly tender. Move to side of pan.
4. Cook scrambled egg on the empty side of the pan. Gently stir egg and cooked cauliflower together.
5. If chicken has not been cooked, push cauliflower mixture to the side again and sear the chicken. Gently fold together with the cauliflower mixture.
6. Season with soy sauce
