2 large Egg, fresh, whole, raw 1 extra small (less than 6" long Banana, fresh 1.5 tbsp ^ Coconut flour - 1 tablespoon - 62.5 (by SCRAPPYMELLA) 0.5 tsp Vanilla Extract
Whisk eggs in cup. Mash banana on plate. Add banana to eggs. Add vanilla extract and mix well. Add coconut flour, if using, and mix. Pour batter in small discs on well oiled pan on medium heat. Cook until bubbles appear, then flip and cook another minute or so. Serve warm with topping of choice (nut butters, jam, maple syrup all work well)
