4 serving Great Value Elbow Macaroni Noodles (1/2 c dry) 1 small Onions, raw 4 cup, cubes Butternut Squash 5 cup Swanson Chicken Fat Free Chicken Broth Less Sodium .75 cup Great Value Fat Free Milk .5 tsp Salt .67 cup Great Value Low Fat Shredded Cheddar Cheese (by JALEEMN)
Cook macaroni according to box.
Heat butter in skillet, add chopped onion,low,about 20 mins.
Add squash and broth to a pot. Bring to boil, simmer til tender (5-7 mins?). Drain reserving .5 Cup broth. Transfer squash to blender, add onions, milk, salt, reserved broth & purée til smooth and creamy( this makes about 4 c sauce.
Pour sauce over noodles and add cheese. Stir til melted.add water or milk to adjust consistency.Add parsley/pepper.
