Ingredients
2.0 tbsp Olive Oil2.0 large Scrambled Egg1.5 cup, pieces or slices Mushrooms, fresh1.0 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry1.0 cup, sliced Zucchini1.0 cup, chopped Carrots, raw2.0 cup, chopped or diced Broccoli, fresh0.5 cup Yellow Sweet Corn, Canned0.5 cup Peas, frozen0.5 small Onions, raw3.0 tbsp Soy Sauce1.0 tsp Ginger Root2.0 clove Garlic3.0 tsp Sriracha Hot Sauce (Rooster sauce)
Directions
Scramble eggs in 1 T Olive oil, set aside. In remaining Olive oil, sautee garlic and onions until onions are translucent. Add mushrooms, broccoli, zucchini and cook until tender. Add corn, peas, and carrots until heated through. Add ginger and soy sauce, stir, and cook 2 more minutes. Stir in eggs. Serve immediately. Top with Sriracha.
