1¼ pounds peeled and deveinedshrimp (sub 1 pound chickentenders, cut into pieces)¼ teaspoon sea salt¼ teaspoon black pepper1 teaspoon cumin2 Tablespoons coconut oil1 small yellow onion, diced (1 cup)2 garlic cloves, minced1 pound pork sausage (can subturkey or beef sausage)2 large zucchini, diced (4 cups)3 Tablespoons lime juice (2 limes)¼ cup chopped cilantro (¼ bunch)¼ teaspoon cayenne (optional)
1. Toss shrimp with salt, pepper, and cumin.
2. Heat a large non-stick skillet over medium high heat and add coconut oil.
3. When oil is hot, add onions, garlic, and sausage. When sausage is cooked through, add shrimp and cook for 1-2 minutes per side until pink and opaque.
4. Turn heat to low and add zucchini, lime juice, cilantro, and cayenne. Serve with broccoli.
