Ingredients
Stir fry in 1 Tbsp canola oil about 3 minutes:1/2 cup onion Add and cook another 3 minutes:1 minced garlic1 cup red pepper slicesAdd and stir fry until browning:1/2 of 14 oz block of extra firm tofuAdd and stir fry to wilt:3 cups chopped spinachPush all to side add and thicken:2 Tbsp. soy sauce2 Tbsp. water1 tsp. cornstarch Serve with cooked whole wheat pasta or soba noodles (not included in nutrition info)
