SuperBowl Pickle Snacks

10 slices of low-fat turkey lunchmeat (about 8 oz.)20 baby dill pickles (low sodium if desired)40 grape tomatoes
1. Wash and dry the tomatoes. Then skewer each one onto its own hors d'oeuvre pick (or toothpick).
2. Drain the pickles from the juice. Pat slightly on a paper towel so not too juicy.
3. Cut the stack of turkey in half. Using a half slice of the meat, wrap up the pickle up in the meat, anchoring it closed with 2 of the picks, each already containing the grape tomato. Then cut the wrapped pickle in half between the picks.
You get 40 crunchy munchie tidbits -- each about 10 calories. The sodium IS high, so beware if that is your issue. Look for low-sodium pickles, and/or even rinse them and pat dry if preferred. You could also substitute fresh cucumber spears for the pickles for a different fresh taste without the sodium.
Ridiculously simple, but a tasty combo!
