Protein Oatmeal Pancakes

Ingredients
3 cups of milk, or buttermilk2 cups of oats (old fashioned or quick)7 Tbs (or 100 g) of unsweetened plain protein powder1.5 tsp baking powder3 eggs, well beaten3/4 c white flour1/4 c wheat flour (or any combination thereof)Stevia to taste
Directions
Combine oats and milk. If using old fashioned oats let set over night, if using quick oats let set until soft. Add other ingredients and mix well. I added six "scoops" of stevia which is about the equivalent of 1/2 teaspoon. However, it may depend on what brand and "style" of stevia you are using. Cook on a hot non-stick fry pan sprayed with non-stick spray. Depending on size of pancake depends on servings.

We topped our's with a tablespoon of ricotta, fruit salad, and a half tablespoon syrup. Enjoy.
