Mix oil sugar and eggs
Combine flour spices baking soda
Add oil mix to dry mix
Add in shredded carrots nuts raisins pineapple and coconut

350 30 min
Let stand 10 minutes then
Turn out onto platter
Top with cream cheese frosting if desired
