Garam Masala Lentil Stew (vegan)

Ingredients
1 cup Lentils 4 cup Chicken stock, home-prepared 2 small (5-1/2" long) Carrots, raw .5 small Onions, raw 2 clove Garlic 1.5 cup Del Monte Diced Tomatoes, No Salt Added 1 tbsp ^ Coconut flour - 1 tablespoon - 62.5 (by SCRAPPYMELLA) 2 tbsp Garam Masala (by JACE520) 1 tsp Salt - Iodized Sea Salt (by HIATTP) .5 tsp Pepper, white 2 cups water14 gram(s) Avocado Oil - Chosen Foods - 1 TBSP (by RAJMHJ)
Directions
Sautee diced onion and carrot until lightly browned. Add Garam Masala and heat for about 20 seconds. Add lentils and stir to heat approx 2 minutes or until the lentils begin to lighten in color. Watch out for burning spices. Add 1 can of diced tomatoes. Stir to combine. Add minced garlic and chicken stock and water. Simmer 30 minutes. Add salt and pepper to taste. Simmer 30 additional minutes or until lentils are desired softness. Serve with rice or flat bread.
