Shoyu Chicken

Ingredients
6 Boneless skinless chicken thighs1/2 c. reduced sodium shoyu (soy sauce)1/2 c packed brown sugar4oz. pineapple juice 1 tbsp. ginger2 cloves garlic, minced1/4 cup chopped scallions
Directions
Place chicken thighs in a baking dish just large enough to hold them in a single layer (or in a crock pot). Combine all the remaining ingredients except scallions in a bowl and pour over chicken. Cover and bake 60 minutes at 375, or simmer in crock pot for 6 hours on high. Top with scallions just before serving.

Serving size: 1 thigh with 1 tbsp. sauce
