Ingredients
2 eggplants, whole2 cloves Garlic .25 tsp Salt juice of 1 lemon or 2 limes1 tbsp Tahini
Directions
Pierce the eggplant and roast at 400F until shriveled and somewhat blackened, about an hour depending on their size. Let cool until cool enough to handle. Scoop out pulp and blend with remaining ingredients until smooth, but not so long that there's no texture.
