Ingredients
8 large Egg, fresh, whole, raw 2 medium (2-1/4" to 3-1/4" dia.) Potato, raw 1 cup, chopped Onions, raw 1 cup, chopped Green Peppers (bell peppers) 1 cup, pieces or slices Mushrooms, fresh 2 clove Garlic 1 dash Pepper, black 3 tsp Old El Paso Taco Seasoning Mix (40% Less Sodium) 2 serving Bacon, Wright Smoked Bacon - 2 slices 1 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
Directions
1. peel and dice potatoes
2. heat coconut oil in large pan and add pototoes. Cook on until soft.
3. add chopped onions, peppers, mushrooms and spices
4. cook until all veggies are soft and pototoes are cooked thru.
5. wisk eggs and add them to pototo mixture and scrabble
