Low Carb/Gluten Free Chrurros

Ingredients
2 serving Eggland's Best Large Egg 1 tbsp Bob's Red Mill Guar Gum (Correct Info) 2 oz Philadelphia Original Cream Cheese 1 C water1 tsp Vanilla Extract 1 tsp Cinnamon, ground 2 TBL Swerve Granular sweetener (or of your choice)1 tsp cinnamonOil for frying
Directions
In a blender, combine the eggs and cream cheese until completely blended. You really need a blender or food processor or it won't completely blend. Transfer to a bowl and whisk in the one cup of water. Add the guar gum, 1 tsp at a time whisking well (or using a hand mixer) after each addition to keep batter smooth.

Transfer mixture to a piping bag fit with a large fluted tip (or round tip). If you don't have a bag, use a ziplock bag with the corner cut off.

Heat your oil to 375 and squeeze the batter into the oil in short strips. Cook for about 5 minutes, turning in the oil as needed.

Transfer to a paper towel lined plate and then toss in the sweetener/cinnamon mixture.
