Frozen Key Lime Cheesecake

Ingredients
1 Keebler Graham Ready Crust1 8 oz package Neufchatel Cheese1 11.25 oz Sweetened Condensed Coconut Milk 4 oz fresh squeezed lime juicelime zest (optional)
Directions
1. Unwrap cream cheese and allow to soften at room temperature or place in bowl and microwave for 15 seconds.
2. Zest and squeeze 2 limes. Measure 1/2 cup of the juice.
3. Whip cream cheese and with electric mixer.
4. Add sweetened condensed coconut milk to whipped cream cheese and blend with mixer until smooth.
5. Sprinkle in lime zest (optional).
6. Slowly add lime juice and mix at low speed until smooth.
7. Pour mixture into crust, invert the handy plastic cover that comes with the crust over the pie and place in the freezer.
8. Freeze 3-4 hours before serving.
