8 cup (8 fl oz) Chicken Broth 4 serving Jennie-O Turkey Lean Breakfast Sausage Link (2 links) 1 cup, chopped Onions, raw 0.5 cup Bell peppers (Green, Red, Yellow, Orange) 1 cup, pieces or slices Mushrooms, fresh 1 tbsp Olive Oil 2 thigh, bone and skin removed Chicken Thigh 2 drumstick, bone and skin remov Chicken Drumstick 1 cup, chopped Carrots, raw 1 serving Corn, canned, Kroger sweet golden corn (1/2 cup serving) 2 cup Spinach, fresh
Heat oil in large soup pot.
Add sausage and brown, breaking up the sausage as it cooks.
Add onions and peppers.
Add Italian seasoning and red pepper flakes, to taste. Salt and pepper to taste.
Add mushrooms.
Cook until sausage is completely browned.
Add chicken, corn and broth.
Bring to boil. Lower heat to simmer.
Continue to cook 1 hour to 90 minutes.
Add spinach. Continue to cook on simmer until spinach is completely cooked.
Serve with Parmesan cheese if desired.
