Spicy Quorn and Chickpea Stew

Ingredients
1 can (410grms) chickpeasPack Quorn mincecan tinned tomatoes1 red onion1 tbsp tomato ketchupsqueeze of tomato pureehandful of parsley (plus extra to garnish)pinch of saltblack pepperhalf tsp of ground paprika, tumeric, cayenne pepper, corriander and cumin2 cloves Garlicdash of chilli sauceolive oil for frying
Directions
right so...
-first combine spices and gently heat in frying pan with oil until slightly darkened.
-add onion and brown
-and quorn mince and cook for 2-3 mins
-then open tin of chickpeas (washed) and add, along with chopped garlic.
-add tin of tomatoes, along with ketchup, tomato puree, tbsp of water and dash off chilli sauce. stir well.
season with salt and pepper.
bring up to boil then simmer on low heat for 25/30 mins untill has a slightly thicker consistency.
add chopped parsley.
stir through again.
serve with couscous or green salad if desired.

    Really quick and easy to make. Next time I'd cut the cayenne to 1/4 tsp - purely a personal thing. Need to keep an eye on the liquid as there's not a lot in the recipe. I re-filled the tomato tin with water and added that. Great portion size. - 4/1/14
