Bob Mill's Delicious Bran Muffins

Ingredients
0.25 cup (not packed) Raisins 1 cup Bob's Red Mill Wheat Bran 5 tbsp Egg Substitute, Stop & Shop(08/14/11) 1.50 cup Whole Wheat Flour, Stop & Shop, unbleached 3 tbsp Molasses 2 tbsp Smart Balance, Light Buttery Spread, Extra Virgin Olive Oil 0.5 cup Nonfat Plain Greek Yogurt (stop & shop) 0.5 cup Milk, nonfat (stop shop dry milk) 1 tsp Baking Soda 2 tsp Leavening agents, baking powder, low-sodium 4 tsp Splenda Brown Sugar Blend 2 serving Mott's Healthy Harvest Peach Medley Apple Sauce (1 serving fruit) (by HEATHERANN27)
Directions
Electric Mixer wheat bran, brown sugar blend, whole wheat flour, baking powder, baking soda and buttery spread. Set aside.
Electric Mixer softened buttery spread, egg substitute, molasses, yogurt, peach sauce and milk. Add mix to dry ingredients. Add raisins, blueberries, raspberries or blackberries to mixture.
Pre heat oven 400 C. Use large If You Care muffin cups and spoon two tblspns into each muffin cup. Bake 20-24 minutes until muffins turn dark brown and are firm on bottoms.

Serving Size: makes 1 dozen+ large cup muffins
