5.0 1tsp Olive Oil1.25 lb Lamb, Cubed1.0 medium (2-1/2" dia) Onions, raw3.0 cloves Garlic0.5 tsp Paprika0.5 cup, halves Apricots, dried0.5 cup, pitted Prunes, dried0.25 cup, halves Pears, dried1.0 can Tomatoes, red, ripe, canned, whole, no salt added10.0 tbsp Cilantro, raw
In a 5qt saucepan with a tight fitting lid, heat oil over high heat. Swirl to coat bottom of pan. Season lamb with salt and pepper. Cook in oil till brown 3-5 min. Transfer to plate.
Reduce heat to medium. Add onion and garlic; cook stirring occasionally until softened 2-4 minutes. Add paprika, apricots, prunes, pears, tomatoes and 3 cups water. Bring to a boil; reduce heat. Simmer partially covered until tomatoes begin breaking apart and sauce is thickened. About 25 to 30 minutes .
Return lamb to pot, and any juices in plate. Cook till heated about 1 minute.
Stir in cilantro and enjoy.
