Apple and sausage stuffed acorn squash

1 cup, quartered or chopped Apples, fresh with skin 1 cup, chopped Onions, raw 3 squash (4 inch dia) Squash, winter, acorn, raw 1 cup Bread crumbs, dry, grated, seasoned 16 oz Ground Pork Sausage, Lean cooked, drained 10 tbsp Parmesan Cheese, shredded
Cut squash in half. Lightly oil and pepper and salt to taste. Bake 40 min at 400 degrees.
Cook onions with a bit of oil until translucent. Add pork. Cook until done. Drain pork and put back in pan. Add bread crumbs, apples and parm cheese. Fill squash with 2/3 cup each. Bake 20 minutes
Serving Size: 1/2 squash and 2/3 cup fulling
