Lela's Ozark Custard Bread Pudding

8 eggs, slightly beaten, or equivalent in egg substitute1 cup Granular Splenda2 teaspoon vanilla extract2 2/3 cup Carnation Nonfat Dry Milk Powder4 cups hot water2 slices reduced calorie bread, cubedDash ground nutmeg
Preheat oven to 375 degrees. Spray an 8x8 inch baking dish with cooking spray. In a large bowl, combine eggs, Splenda, and vanilla extract. In a medium bowl, combine dry milk powder and hot water. Gradually add milk mixture to egg mixture. Fold in bread cubes. Pour into prepared baking dish. Lightly sprinkle nutmeg over top. Bake for 50 to 60 minutes or until knife inserted near center comes out clean. Place pie plate on a wire rack and let set for 15 minutes. Refrigerate for at least 1 hour. Cut into 8 servings.
