Tofu Scramble

Ingredients
1 block Tofu, firm 1 cup, diced Zucchini 1 serving 1 Med. Green Bell Pepper , small dice1 medium (2-1/2" dia) Onions, raw , small dice1 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average , small diced.25 cup Parsley 2 clove Garlic 2 serving Ground Tumeric, svg size 1 tbsp 1 tbsp Garlic powder 1 tbsp Cumin - Ground, McCormick (1 tbsp) 1 serving Diamond Kosher Salt (1 tsp) 1 tsp Black Pepper (Ground) 1 tbsp Extra Virgin Olive Oil 2 serving Upton's Naturals Chorizo-Style Seitan (2 oz), crumbled
Directions
In a bowl smash/crumble the tofu so that it resembles scrambled eggs.
Next add all other ingredients and mix well.

Heat in a non-stick skillet for about 3-5 min to soften a veggies just a bit.

Store unused portion in an airtight container.
