1/4 cup Earth Balance Buttery Sticks (or vegan butter of your choice)1/4 cup non-hydrogenated shortening 1 1/2 cups icing sugar pinch nutmeg1/4 cup vanilla custard powder or cook-and-serve vanilla pudding powder2 tsp vanilla2 tbsp unsweetened coconut milk beverage (not canned)
Mix all the ingredients together with a hand mixer until creamy.
Chill 30 minutes before using.
Serving Size: Makes enough to modestly frost 30 cupcakes with 2 tbsp each, about 3 3/4 cups
