Chocolate Quinoa Muffins

Ingredients
2 cup cooked Quinoa 1/3 cup Applesauce, natural unsweetened 1/2 cup Coconut Oil 4 Eggs, large 16 tbsp (1cup) Stevia Blend for Baking (or any sugar will change your calorie count)16 tbsp (1cup) Cocoa Powder, Hershey's Natural Unsweetened 1 tsp Baking Soda 1 tsp Vanilla Extract 1/3 cup Almond milk - Silk - vanilla (or any milk but will change your calorie count)
Directions
Cook and cool quinoa (bring to boil then cover lower heat to LOW and cook for 15 minutes)

Add all ingredients to a bowl mix for 2 minutes will be liquidy. Pour into cupcake pan if not using liners be sure to spray. Bake at 350 for 15 minutes. Touch for doneness. Should be springy. These are very moist. SUPER YUMMY!
