3 Eggs1 cup Thai Kitchen Organic Coconut Milk (can) 1/3 cup Coconut Oil 1/3 cup Honey 2 tsp Vanilla Extract 1/4 cup xylitol or other sugar sub1/2 cup Almond Flour1 tbsp Coconut Flour1 1/2 cups unsweetened, shredded coconut1/4 tsp. salt
Preheat oven to 350 degrees
Grease8x8 inch baking dish (I line it with parchment paper)
Mix eggs, coconut milk, oil, honey, vanilla and xylitol in food processor.
Pulse in almond flour, coconut flour, shredded coconut and salt.
Bake for 1/2 hour
Cool for 1/2 hour, then refrigerate - serve chilled
Serving Size: makes 16 2x2 inch squares
