Cheesy Chicken and Tomato Casserole

Ingredients
1.5 pounds chicken breast, cut in pieces1 package no-yolk egg noodles8 oz baby bella mushrooms (chopped)1 small yellow onion, diced1 green bell pepper, diced8 oz light sour cream2 cups reduced fat cheddar cheese1 can Red Gold Diced tomatoes with basil, garlic, and oregano4 tbsp parmesan cheese3 tsp garlic
Directions
Cook noodles in boiling water according to directions on package. Do not overcook, as casserole will be heated in oven again.

Heat olive oil in a frying pan, and add the chicken to cook. After a couple minutes (one side of chicken starts to turn white) add the diced onion, green pepper, chopped mushrooms, and 3 tsp garlic. Cover and simmer, stirring occassionally, 5-8 minutes or until chicken is thoroughly white.

In an oven-safe, casserole dish combine noodles, sour cream, and diced tomatoes. Then add the chicken and veggie mix, and the cheese. Stir until well blended, then sprinkle 4 tbsp parmesan cheese on top.

Place in preheated 350 degree oven for about 20 minutes, until all the cheese is melted and the chicken is completely cooked.

Makes 8 large, filling servings.
