Bisquik Crepes with Lemon Cream Cheese Filling

0.5 cup Bisquik2 large Eggs.5 cup 2% Milk3 tsp Sugar 1 tbsp Butter1 oz Cream Cheese (1/3 less fat)2 tbsp Dickenson's Lemon Curd1 tbsp Butter
Melt a Tbls of butter and add two eggs, 1/2 cup of milk, 1 Tbls of sugar and the half cup of bisquik. Stir to get the lumps out of it. Batter should be thin.
Pour 1/3 of the batter into a large buttered skillet. Cook for a couple minutes until it can be easily flipped to cook for a minute on the other side.
While Crepes are cooking mix 1oz of cream cheese with 2 Tbls of lemon curd to make filling.
Spread 1/3 of the filling on each crepe, folding to serve.
Serving Size: Makes 3 large Crepes.
