Easy Salad Rolls w/ Peanut Sauce

Ingredients
ROLLSLarge pan of simmering water24 pieces of rice paper3 cups rice noodles (precooked and cooled2 cucumber , cut in long thin strips2 cups red pepper, thinly sliced2 cups grated carrotSAUCE6 Tbsp Tomato Paste 3 Tsp SugarGarlic¾ Cup Hoisin Sauce¾ Cup Peanut Butter¾ Cup Chicken Stock
Directions
Place rice paper(1 at a time) in simmering water to soften(approx 15-20 secs)
Layer with noodles, cucumber, carrots and peppers. How much depends on how big you want them.
To make the sauce just combine all ingredients in a saucepan and simmer and stir until all ingredients are combined. Sauce will thicken as it cools.
Dip roll in sauce and enjoy
