.6 serving Old El Paso crunchy taco shell (3 shells=1 serving) 1 oz Mozzarella Cheese, part skim milk .5 medium (2" dia, 5" long, raw) Sweet potato, cooked, baked in skin, without salt 1 cup Spinach, fresh .5 cup, pieces or slices Mushrooms, fresh 2 tbsp chopped Onions, raw 1 medium (2-3/4" dia) (approx 3 Apples, fresh with skin 2 tbsp Salsa - Tostitos All Natural Chunky Salsa (medium) 1 1tsp Olive Oil .13 fruit without skin and seeds Avocados, California (Haas) 1 serving Egg, hard boiled, 1 egg (56g)
Coat non stick spray in pan. Saute mushrooms, onions for 2-3 minutes. Add sweet potatoes, olive oil, and small sprinkle of cumin, oregano, & garlic. Add spinach. Heat tortillas.
Fix up tacos.
