Super Salmon Patties

Ingredients
2 Cans Pink Salmon2 large eggs2 pkg Fat Free Saltine Crackers4 tbsp Extra Virgin Olive Oil1 med chopped yellow onionGarlic Salt & Pepper to taste
Directions
Drain and remove bones/skin (my preference) from salmon.
Put in large mixing bowl. Add eggs, onions and crushed up crackers. Mix well.

Heat oil in skillet. Form salmon mix into patties and fry in skillet about 3min each side or until golden brown. Season with garlic salt & pepper to taste.
