veggie scrambled eggs

Ingredients
2 large Egg, fresh, whole, raw 3 tsp Garlic 1 cup Spinach, fresh 50 gram(s) bell pepper, red, sweet, raw .25 fruit without skin and seeds Avocados, California (Haas) 1 tbsp Extra Virgin Olive Oil
Directions
Saute garlic in olive oil. Add sliced peppers, add spinach. When spinach is wilted add two whisked eggs on top. Stir while cooking, or cover and turn heat to low for an omelette or fritatta style dish. When ready to serve add seasonings of choice and diced avocado.
