GF Oat bran Zucchini Muffin

3 large Egg, fresh, whole, raw .75 cup Granulated Sugar 12 oz Motts unsweetened Applesauce 2 cup Zucchini (Shredded) (by HEALTHYCHIC) 1 tsp Vanilla Extract .5 cup Oat Bran 2.5 cup All-Purpose Flour, Gluten-Free - Bob's Red Mill's (by MGALL4) 2 tsp Cinnamon, ground .25 tsp Ginger, ground .25 tsp Nutmeg, ground .5 tsp Salt 2 tsp Baking Powder 1 tsp Baking Soda
Directions
Mix eggs, sugar, Applesauce, shredded, zucchini and vanilla
Add all purpose flour, oat bran, cinnamon, ginger, nutmeg, baking powder, baking soda and salt
Mix well. Spoon into muffin pan. Spray pans with cooking spray (or paper liner) and bake in oven for 20-25 minutes at 325 (F) or 162 (C) Should make 17 muffins.
