2 cup Almond meal 4 large Egg, fresh, whole, raw .5 cup (8 fl oz) Water, tap .25 cup Coconut Oil 1 tsp Baking Soda .5 tsp Salt 3 serving Monk fruit in the raw .5 cup, sliced Strawberries, fresh .5 cup, unthawed Blueberries, frozen (unsweetened)
Melt the coconut oil in the microwave. About 20 seconds. Your eggs will need to be room temp. Mix everything except fruit in a blender. You don't have to, but I think they come out better if you let the batter sit about 15 minutes. Heat skillet and grease with a little coconut oil. Add fruit as you cook each pancake.
