FAST FAST FAST Black Bean Soup

Ingredients
1 medium Onion, diced2 cloves of garlic, diced1 tbsp oil2 16 oz. can black beans (I use cuban style, but plain works fine)1 16 oz. can diced tomatoes1/2 cup of your favorite salsa
Directions
Heat oil on medium heat in a large pot. Add fresh diced onions, when they become translucent, add the fresh garlic. Saute for about a minute. Add canned black beans (including juices) and canned diced tomatoes (including juices) and the salsa. You can add a can of low sodium corn if you want (just don't add all of the juices).

Turn heat to low-medium and let bubble for 20 minutes. Serve with diced avacado, sour cream, and shredded cheese. This dish is delicious with corn bread!

    This was delicious, quick and easy. I was caught up in a computer game and all of a sudden it was 5:15 pm with no dinner in sight. I'd wanted to make soup to go with the abundance of corn muffins we had to eat before they spoilrf. I found this recipe, had all the ingredients and it saved my life. - 6/6/08
